My mom bought me a slow-cooker last year and I've been using it like crazy ever since. It's so easy to throw a bunch of ingredients into the pot and come home to a delicious meal 6 hours later. Here is my favorite crock pot recipe, just like Grandma used to make me.... Enjoy!
Classic Chicken and Dumplings
Ingredients:
(Enough for 4 servings)
- 2 Boneless, skinless chicken breasts. Throw them in whole. They can be either fresh or frozen.
- 1 tablespoon of butter
- 1 (10.75 oz) can condensed cream of chicken soup. (I've used cream of mushroom soup as well and its delicious)
- 1/2 onion, finely diced
- 1 (10 oz) package refrigerated biscuit dough, torn into pieces
- Some water
Put all your ingredients into the crock pot (Except for biscuits!!!!), and then fill with enough water to cover everything.
Cook for 5 to 6 hrs on high. 30 minutes before serving your meal, tear up the biscuit dough and throw it in. You can leave the torn pieces rustic or roll them into a ball. Pieces will double or triple in size so don't make them too big (even though the dumplings are the best part). You can also cut up the cooked chicken or shred it with two forks at this time.
